Enjoy a Tasty, Lemony Louisvale Treat
We all love wine! But while you may get the most enjoyment from your favourite Louisvale Wines vintage by kicking back with a crisp, cool glass at the end of the day, what’s the spoil of a great wine without a sweet treat to enjoy with it? Today we’re sharing one of the classic favourites from the Food @ Louisvale experience- a truly South African Lemon Meringue that’s to die for. Bring a little of the Louisvale magic home with you, and give this tasty treat a try!
Pairing your Lemon Meringue
If you love the Louisvale range, we’re sure the sparkling pop of our MCC Brut range has already won your heart. But in addition to celebrating special occasions, did you know that sparkling white wines like this also pair beautifully with light, citrusy sweet treats like lemon meringue! Even if your first attempt doesn’t look quite like the spectacular Louisvale dining experience, it will still taste great- and gives you the perfect opportunity to enjoy some bubbles with it!
Simple to Make, Delicious to Eat
The secret to a great Lemon Meringue lies in its simplicity- the clean taste of the zest, the sweet fluffiness of the meringue, and the scintillating spoil for your tastebuds. Let’s get this one ready to eat!
The Base:
- 1 Pack Marie Biscuits
- 100g Butter, Melted
- 50ml Golden Syrup
Pop your biscuits in the blender, or drop them in a clean bag and crush them. You’re looking for a coarse texture ideal to make your base. And we won’t judge you if you steal a few to enjoy, either!
Then simply pour the liquid ingredients through the base, mix well, and press the biscuit mix into a lined spring cake tin or a foil pie container. It may look a little dry, but don’t panic! Make sure it is well compacted and every surface is covered.
The Lemony Filling
- 385g Condensed Milk
- 125ml Lemon Juice
- 2 Tsp Lemon Zest
- 2 Egg Yolks
This couldn’t be easier. Mix everything together, and pour over the biscuit base you just made.
The Show Stopping Meringue
- 4 Egg Whites
- 125ml White Sugar
Now it’s time to get serious. In an electric mixer, whisk together the sugar and egg whites until you get stiff peaks that hold their shape and look a little glossy. Now get it on top of that citrus base! You can pipe it for a super-elegant finish, spoon it for rustic charm, or whatever pleases your heart.
Bake the pie in the oven at 150 degrees Celsius until it’s golden brown. Let it cool to room temperature, and you have a delicious treat ready to eat! If by some miracle this one doesn’t disappear in the day, cover it and leave it at room temperature- it’s not going to hold up in the fridge.
